Chicken Breast<BR>marinated in <BR>Cranberry <BR>Honeywine

This recipe was given to me by the illustrious and iconoclastic beauty, Mo. This easy to prepare dish is known around the Berkeley area as "Mo's other White meat". I don't know what exactly the other white meat refers to. I am afraid to ask.

Ingredients: (Easy, only five)

Chicken Breast 2-3Lbs. HoneyRun Cranberry Honeywine. One 6" sprig Rosemary (2 tps. dried) Six Pepper Corns, salt.

Chop Rosemary and grind pepper corns into tiny pieces. Put meat and spices into a ziplock bag. Add enough Cranberry wine to cover. Let marinate for 30-35 minutes. Do not over marinate. Bake until meat is 155 degrees. Broil for a few minutes to brown the top. Serve with red potaotes, baked acorn squash with honey,butter or maple syrup glaze.

This is also very tastey for Pork Tenderloin
